Cooling Mint Salad

Take salad beyond lettuce. Try mint instead for a cool Summer meal.

Ingredients:

  • 1 cup fresh mint leaves (loosely packed, whole or roughly chopped)
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled (optional)
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Optional Add-ins:

  • 1/2 avocado, diced (adds healthy fats)
  • 1/4 cup pomegranate seeds
  • 1/2 cup cooked quinoa or chickpeas (adds extra protein)

Instructions:

  1. Prep the veggies
    Wash and chop the mint, cucumber, tomatoes, and onion.
  2. Combine
    In a large bowl, combine all the ingredients (except the feta, if using).
  3. Dress
    Drizzle with lemon juice and olive oil. Add salt and pepper to taste.
  4. Toss and garnish
    Toss gently to combine. Top with crumbled feta (if using) and serve immediately.
