Take salad beyond lettuce. Try mint instead for a cool Summer meal.
Ingredients:
- 1 cup fresh mint leaves (loosely packed, whole or roughly chopped)
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup feta cheese, crumbled (optional)
- Juice of 1 lemon
- 2 tablespoons olive oil
- Salt and pepper to taste
Optional Add-ins:
- 1/2 avocado, diced (adds healthy fats)
- 1/4 cup pomegranate seeds
- 1/2 cup cooked quinoa or chickpeas (adds extra protein)
Instructions:
- Prep the veggies
Wash and chop the mint, cucumber, tomatoes, and onion. - Combine
In a large bowl, combine all the ingredients (except the feta, if using). - Dress
Drizzle with lemon juice and olive oil. Add salt and pepper to taste. - Toss and garnish
Toss gently to combine. Top with crumbled feta (if using) and serve immediately.
