Lemon Balm Sun Tea

Lemon balm also has a calming effect on the nervous system. Sun tea is a great way to gently extract this herb ally’s beneficial compounds.

Ingredients:

  • 1 handful fresh lemon balm leaves (or 2–3 tablespoons dried)
  • 4–6 cups cold water
  • Honey (or sweetener of choice)
  • 1 large glass jar with a lid (quart-size or larger)
  • Sunshine ☀️
  • Optional:
    • 1–2 sprigs fresh mint or lemon verbena
    • Slices of lemon or cucumber

Instructions:

  1. Harvest and rinse
    Rinse the fresh lemon balm leaves gently to remove any dirt or bugs.
  2. Fill the jar
    Place the lemon balm (and any additonal herbs you’d like) into the jar. Pour in 4–6 cups of cold, filtered water.
  3. Cover and set in the sun
    Cover the jar with a lid or clean cloth and place it in direct sunlight for 2–4 hours.
    • The longer it sits, the stronger the flavor.
    • Avoid brewing too long (more than 6 hours), especially in very hot weather, to prevent spoilage.
  4. Strain and chill
    Strain out the herbs. Sweeten if desired. Refrigerate or serve immediately over ice.
  5. Enjoy!
    Garnish with a lemon slice, cucumber, or sprig of lemon balm.
